Soy Sauce Ginger Chicken

Ingredients

  • 4 whole legs (optional: remove skin, cut into pieces)
  • 4 inches old ginger - sliced
  • 4 cloves garlic - minced
  • 3 stalks spring onion - separate white and green part. Cut into 4 cm length
  • 1 stalk cilantro - sliced
      (A) Mix
  • 2 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • salt, sugar to taste
  • 3/4 cup water
Method
  1. Marinate chicken in a little bit of corn flour. Keep covered in fridge for about 1 hour
  2. 2 tbsp oil, Medium low heat. Stir fry ginger, garlic and white part of spring onions till fragrant
  3. Add chicken. Stir fry for about 1 minute
  4. Add (A). Bring to boil
  5. Lower heat and simmer covered for about 20 minutes
  6. Remove cover and simmer till liquid is reduced by more than half
  7. Garnish with cilantro and serve hot
