- 4 whole legs (optional: remove skin, cut into pieces)
- 4 inches old ginger - sliced
- 4 cloves garlic - minced
- 3 stalks spring onion - separate white and green part. Cut into 4 cm length
- 1 stalk cilantro - sliced
(A) Mix
- 2 tbsp dark soy sauce
- 1 tbsp light soy sauce
- salt, sugar to taste
- 3/4 cup water
Method
- Marinate chicken in a little bit of corn flour. Keep covered in fridge for about 1 hour
- 2 tbsp oil, Medium low heat. Stir fry ginger, garlic and white part of spring onions till fragrant
- Add chicken. Stir fry for about 1 minute
- Add (A). Bring to boil
- Lower heat and simmer covered for about 20 minutes
- Remove cover and simmer till liquid is reduced by more than half
- Garnish with cilantro and serve hot
