Meatball in Bolognese sauce

My Thoughts




Ingredients
  • 600g minced pork
  • 1/3 cup dry breadcrumbs (30g)
  • 1 egg - beaten
  • 1 small onion - chop fine
  • 1 1/2 tsp dried mixed herbs
  • 500g bolognese sauce (from jar)
  • 2 cloves garlic - crush
  • 1 tsp sugar
  • 200ml water
  • 1 1/2 tbsp oil
Method
  1. Combine meat, breadcrumbs, eggs, onions and herbs.
  2. Roll into balls.
  3. Add 1 1/2 tbsp oil in pan. Low heat.
  4. Brown meatballs. Set aside.
  5. In another pan, heat up 1 tbsp oil.
  6. Add garlic. Stir awhile. 
  7. Add pasta sauce, water and sugar
  8. Stir well. When boil.
  9. Add meatball. 
  10. Season with salt and pepper.
  11. Can thicken with cornflour solution if needed.

Banana Bread (BM)

My Thoughts
We had some very very ripe bananas. 😅 So, I decided to bake banana bread in my bread maker. 

I forgot to include the bananas in this picture. 😅

I told my #2 it should be banana cake because it is batter not dough. 😂

Verdict: The whole family loves it! 🤗💖🥰

Ingredients
  • 1/2 cup milk - lukewarm
  • 114g butter - soften in microwave
  • 2 large eggs - beaten
  • 1 tsp vanilla essence
  • 3 medium ripe bananas - mashed
  • 1/2 tsp salt
  • 280g AP flour 
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 170g sugar

Method
  1. If you have time, you can sieve the flour, baking powder and baking soda together. The texture will be lighter.
  2. Put into the bread pan all the ingredients in the order recommended by the manufacturer. 
  3. For me, I put in the liquids followed by the dry stuff .... in the order of my ingredient list
  4. Settings- - Quick, Light, 2lb
  5. During the initial mix, sometimes the dry stuff clumps at the corners. Use rubber spatula to push in the stuff to prevent clumping.
  6. When done, remove bread pan from machine. 
  7. Check for if cooked using a stick. If not cooked yet, put back in the hot machine for another 10min.
  8. When done, DO NOT remove the bread from the bread pan. Let it rest in the bread pan for about 10 minutes.
  9. Gently remove from bread pan. Dont forget the paddle!
  10. Let the bread cool completely before slicing!

Easy Buttermilk Chicken

#2 had craving for this during MCO. 😅

No choice lor. Tried to cook this. 

Verdict. #2 likes it but says that it is too milky. 

Maybe coz I used full cream milk? Hhmmmm...... will try again.... 

Hubby likes it though.


Ingredients
  • 3 whole legs - no skin, bite size
  • 2 tbsp corn flour
  • 3 cloves garlic - mince
  • 4 pcs dried chilli - cut into 1"
  • Handful of curry leaves
  • 2 tbsp butter
  • 200 ml milk
  • Salt, pepper
Method
  1. Marinade chicken with salt, pepper and 2 tbsp corn flour for at least 30min in fridge. Overnight better
  2. Wait till chicken not so cold. 
  3. Heat oil for deep fry. Lightly coat chicken with corn flour before frying till golden brown. Drain and set aside
  4. In new pan. Low heat. Melt butter.
  5. Saute garlic, chilli and curry leaves till fragrant
  6. Slowly add milk. Keep stirring. Cook until sauce is reduced and thick.
  7. Add chicken and stir well till chicken is coated.
  8. Serve immediately.

Thai Basil Minced Pork

My Thoughts
This is another favourite of mine. Why? It is a quick dish to whip up. Not an authentic thai dish (Pad Kra Pao) but modified to suit my family's palate.

However, #3 doesn't like it that much. She actually picks out the thai basil. 🙄

Well, the rest of the family loves this dish anyway. Just go easy on the fish sauce. It can end up being salty.

Serve with plain rice and a fried egg. Yummy.

Ingredients
  • 2 shallots - sliced thin
  • 6 cloves garlic - sliced thin
  • 3 cili padi - slice thin, remove some seeds to reduce spiciness
  • 500g minced pork (prefer with fat)
  • 5 tbsp water 
  • 1 - 1 1/2 cups of thai basil leaves 
  • Seasoning
    • 1 tsp sugar
    • 1 tbsp fish sauce
    • 1 tbsp light soy sauce
    • 2 tsp dark soy sauce
    • 2 tsp oyster sauce
  • 3 tbsp oil
Method
  1. Medium heat. 3 tbsp oil. Stir fry shallots and garlic about 3 minutes.
  2. Add cili padi. Stir for another minute.
  3. Increase heat. Quickly add minced pork. 
  4. Use spatula to break up meat to avoid clumps.
  5. When meat is cooked and dry, add seasonings.  Stir fry 1 minute. 
  6. Add water. Stir fry 1 minute. 
  7. Add basil leaves and stir fry till leaves wilted.
  8. Serve with rice and fried egg.

Vit's Mi Goreng Pattaya

This is such a simple dish. I made it without wrapping with eggs. Just made some omelettes, sliced it and sprinkle on top of noodles.

I used 2tsp of cili boh, but if u like spicy food (like #3), u can use 3 tsp.

Suitable for a midweek lunch. 

Ingredients (Feeds 1 😂)
  • 2 pieces of Vit's dry noodle.
  • 2 eggs - beat with a little bit of salt
  • 2 tsp cili boh (3 tsp if you prefer spicier)
  • 1/2 tbsp oyster sauce
  • Some vegetables (sawi, cabbage, taugeh, cauliflower florets...)
  • 1 tbsp dark soy sauce
  • 2 clove garlic - mince
  • 4 tbsp cooking oil
  • Optional proteins
    • 1/2 stick fish cake
    • 50g chicken breast - sliced thin, marinate in a little soy sauce and corn flour
    • 2-3 pcs prawn - shelled, deveined
    • 2-3 pcs sotong - cleaned
  • Garnishings 
    • Few slices of red chili
    • Few slices of tomatoes 
Method
  1. Put Vit's noodle into boiling water for about 3-4 minutes.
  2. Strain and leave aside.
  3. 4 tbsp oil. Medium heat. Stir fry garlic and cili boh.
  4. Add your proteins and cauliflower (if using) Stir fry for about 2 minutes.
  5. Add other vegetables, dark soy and oyster sauce.
  6. Add noodles. Stir till cooked and make sure everything is mixed well.
  7. Keep aside.
  8. Make an omelette.
  9. Put noodles into center of omelette and wrap the noodles with omelette. 
  10. Serve with garnishings.

Basic Pizza Dough (BM method)

This recipe makes 1 big/regular pizza. 

Easy to use a breadmaker. Just dump everything and wait 1 1/2 hour and you get a perfect dough. 😁 Perfect for me. 😬

Note. 
Must remember to roll into thinner crust. #3 prefers really thin crust.

And also planning to buy a dough mat.... soon. 

#2 mixed in fresh chopped garlic into the tomato puree. Really good coz we are garlic lovers. 😄

  Ingredients
  • 2 cups of bread flour/AP flour (sieve) - 256g
  • 1 tbsp butter (softened) - 14.2g
  • 1/2 cup warm water
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tsp garlic powder (optional)
  • 1 tsp yeast
  • 2 tbsp water (optional)
Method
  1. Measure out butter. Let if soften while you get the rest ready.
  2. Sieve the flour
  3. Add the ingredients into BM according to manufacturer's guide
  4. With my machine,
    1. Put water
    2. Add butter
    3. Add salt in one corner
    4. Add sugar
    5. Add garlic powder
    6. Add flour
    7. Make a hole and add yeast
  5. Select 'dough' setting. Start machine
  6. After 1 or 2 minutes, check dough. If too dry, add 1 tbsp of water. 
  7. Check again after a minute, if still dry, add another tbsp of water.
  8. It should form a ball of dough.
  9. After the cycle is done, preheat the over - 200C
  10. Take out dough and roll into shape.
  11. Or can use hand to flatten and stretch out dough.
  12. Pinch or fold over edges to make crust.
  13. Brush surface of pizza with olive oil
  14. Poke holes in the dough. Stab with fork.
  15. Put your desired toppings
  16. Bake for about 18-20 minutes till crust slightly brown and toppings cooked.

1 cup water, PLUS
2 tablespoons water
2 tablespoons oil
3 cups bread flour
1 teaspoon sugar
1 teaspoon salt
2 1/2 teaspoons active dry yeast
