My Thoughts
Normally, the chicken pieces has to be deep fried before cooking in the sauce.I didn't want to clean an oily kitchen, so I stir fried the chicken pieces.
Ingredients
- 3 pieces de-boned chicken whole leg (chicken chop)
- 1 tbsp chinese cooking wine
- Some cornflour
- Salt
- 1 tsp of sesame oil
- 1 small cucumber
- 1/2 capsicum - seeded, cut into small squares
- 3 garlic - minced
- 1/2 onion - cut into wedges
- 1 small tomato - cut into wedges
- Sauce (Mix)
- 4 tbsp tomato ketchup
- 2 tbsp Lingham chilli sauce
- 1 tsp plum sauce
- 1/2 tsp worcestershire sauce
- 1/2 tsp oyster sauce
- 1 tsp Chinese rice vinegar
- 1 tbsp sugar
- 4 tbsp water
- 1/2 tsp cornstarch
- Dash of white pepper
Method
- Remove skin from chicken. Cut into bite size.
- Marinate the chicken pieces with corn flour, cooking wine and salt. Add the corn flour little by little. Make sure to coat each piece of chicken. Add sesame oil
- Remove skin from cucumber. Cut into 4 lengthwise. Remove seeds. Cut slant into bite size
- Add 2 tbsp oil. Medium heat. Stir fry chicken till cooked. Set aside.
- In another pan, saute garlic in a little oil.
- Add in the sauce. Low heat. Stir till boil
- Add in cucumber, onion, capsicum, tomato and chicken.
- Let it cook a while.
- Turn off heat and and serve while hot.
