Ice Blended Mocha

Ingredients
  • 2 tsp instant coffee powder
  • 2 tsp cocoa powder
  • 2 tsp condensed milk
  • 1/2 cup hot water 
  • 1 cup milk
  •  Ice cubes

Method

  1.  Add coffee powder, cocoa powder and condensed milk to hot water. Stir to dissolve
  2. Add milk and ice cubes
  3. Blend

Soy Sauce Ginger Chicken

Ingredients

  • 4 whole legs (optional: remove skin, cut into pieces)
  • 4 inches old ginger - sliced
  • 4 cloves garlic - minced
  • 3 stalks spring onion - separate white and green part. Cut into 4 cm length
  • 1 stalk cilantro - sliced
      (A) Mix
  • 2 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • salt, sugar to taste
  • 3/4 cup water
Method
  1. Marinate chicken in a little bit of corn flour. Keep covered in fridge for about 1 hour
  2. 2 tbsp oil, Medium low heat. Stir fry ginger, garlic and white part of spring onions till fragrant
  3. Add chicken. Stir fry for about 1 minute
  4. Add (A). Bring to boil
  5. Lower heat and simmer covered for about 20 minutes
  6. Remove cover and simmer till liquid is reduced by more than half
  7. Garnish with cilantro and serve hot

Ginger Braised Chicken

Ingredients

  • 4 chicken legs (remove skin, cut into pieces)
  • 250g young ginger (slice thin)
  • 2 garlic (lightly crush with back of knife)
  • 1 1/2 tsp oyster sauce
  • 250-300ml water
  • 1 tbsp cooking wine
  • 2 tsp corn flour (add 1 1/2 tbsp water)
  • 2 spring onion (cut green part into 4cm)
      (A)
  • 2 tsp light soya sauce
  • 1 tsp sugar
  • 1 tsp sesame oil
  • dash of pepper
Method
  1. Marinate the chicken in a little corn flour. Keep covered in fridge for about 1 hour.
  2. 2 tbsp oil. Medium low heat. Stir fry ginger till fragrant.
  3. Add garlic. Continue to stir fry awhile.
  4. Add chicken. Stir fry till outside of chicken is a little brown.
  5. Add oyster sauce. Make sure chicken is coated with oyster sauce.
  6. Add water. Bring to boil.
  7. Lower heat and add (A) 
  8. Simmer covered for about 20 minutes
  9. Remove cover and simmer till water is reduced a little.
  10. Add wine.
  11. Mix in spring onion.
  12. Add cornstarch mixture.
