My Thought
Ingredients
- 400g chicken breast - sliced and pat dry
- 2 red chilli - remove seed and cubed
- 1 green capsicum - cubed
- 1 onion - cubed
- 1/2 tbsp fermented black beans
- 1 tbsp minced garlic
- 1 tsp sugar
- corn starch slurry - (2 tsp cornflour + 1 1/2 tbsp water)
- (A) Marinade
- 1 tsp light soy sauce
- 1 tsp cornflour
- (B) Sauce
- 2 tbsp oyster sauce
- 1 tsp dark soy sauce
- 1 tbsp Shaoxing wine
- 1/2 cup stock
- dash pepper
Method
- Marinate the chicken in (A) for 10 minutes.
- Soak fermented black beans in water for awhile. Rinse and chop fine.
- Heat 2 tbsp oil. Stir fry chicken for a while. Remove and set aside
- Add chopped beans, minced garlic and sugar. Stir fry till fragrant.
- Add chicken, chilli, capsicum and onion. Stir to mix well.
- Add (B) and continue to mix well.
- Add cornstarch slurry.
- Serve hot.
