Crispy Thai Omelette

 My Thoughts

This dish is so delicious but very sinful 😆😆 So, cannot have it too often.

Ingredients

  • 2 large eggs
  • 1/2 tsp vinegar
  • 1 tsp fish sauce
  • 1 tsp water
  • 1 tbsp cornflour
  • 3/4 cup oil
Method
  1. Put everything (except oil) in a bowl.
  2. Beat the egg mixture. 
  3. Use back of spoon to make sure no cornflour lumps.
  4. Beat again until frothy.
  5. Medium heat. Heat oil until lightly smoking.
  6. Hold bowl of egg mixture about 1 foot above the pan. Pour egg mixture into oil in one go.
  7. Leave it alone for about 20sec, then flip it.
  8. Cook other side for another 20sec.
  9. Remove omelette and drain the oil.
  10. Serve while hot.

Steamed Tomyam Minced Pork

My Thoughts

This recipe is super easy, super fast and super yummy. My 'go-to' recipe when I am busy (or lazy)

Ingredients

  • 250g minced pork
  • 2 tbsp tomyam paste
  • 2-3 daun limau purut
  • 1 small carrot - cubed
  • 1 small tomato - into 6 wedges
  • handful thai basil leaves (optional)
Method
  1. Rinse mince pork in colander under running water. Set aside to drain
  2. Put into steaming plate. 
  3. Add tomyam paste. Stir to mix.
  4. Add carrot and tomato. Mix.
  5. Steam for about 10 minutes.
  6. Turn off the heat, open the cover and garnish with thai basil leaves. Close back the cover for a while.
  7. Serve while hot.

Mom's sweet sour chicken

My Thoughts

Normally, the chicken pieces has to be deep fried before cooking in the sauce. 

I didn't want to clean an oily kitchen, so I stir fried the chicken pieces. 


Ingredients

  • 3 pieces de-boned chicken whole leg (chicken chop) 
  • 1 tbsp chinese cooking wine
  • Some cornflour
  • Salt
  • 1 tsp of sesame oil 
  • 1 small cucumber
  • 1/2 capsicum - seeded, cut into small squares
  • 3 garlic - minced
  • 1/2 onion - cut into wedges
  • 1 small tomato - cut into wedges
  • Sauce (Mix)
    • 4 tbsp tomato ketchup 
    • 2 tbsp Lingham chilli sauce
    • 1 tsp plum sauce 
    • 1/2 tsp worcestershire sauce
    • 1/2 tsp oyster sauce
    • 1 tsp Chinese rice vinegar
    • 1 tbsp sugar
    • 4 tbsp water
    • 1/2 tsp cornstarch 
    • Dash of white pepper

Method
  1. Remove skin from chicken. Cut into bite size. 
  2. Marinate the chicken pieces with corn flour, cooking wine and salt. Add the corn flour little by little. Make sure to coat each piece of chicken. Add sesame oil
  3. Remove skin from cucumber.  Cut into 4 lengthwise. Remove seeds. Cut slant into bite size
  4. Add 2 tbsp oil. Medium heat. Stir fry chicken till cooked. Set aside.
  5. In another pan, saute garlic in a little oil.
  6. Add in the sauce. Low heat. Stir till boil
  7. Add in cucumber, onion, capsicum,  tomato and chicken.
  8. Let it cook a while.
  9. Turn off heat and and serve while hot.

Easy Stir fry Chicken with Broccoli

I cook this quite often, especially mid week. Easy and tasty too.


Ingredients

  • 1 whole chicken breast - remove skin and cubed
  • 1 tbsp corn flour
  • a small head of broccoli
  • 3 cloves garlic - minced
  • oil
  • Sauce (Mix)
    • 1 tbsp soy sauce
    • 1 tbsp oyster sauce
    • 1/2 tsp sesame oil
    • 1 tsp sugar
    • 1 tsp corn flour
    • 1/2 cup water
    • dash white pepper

Method
  1. Marinate the chicken pieces with corn flour  and salt. Add the corn flour little by little. Make sure to coat each piece of chicken, If too dry, add a little water.
  2. Cut the broccoli into bite-sized florets.
  3. Boil a pot of water. Blanch broccoli for a minute. Scoop up, run cold water through it. Drain and set aside
  4. Heat pan.
  5. Add 2 tbsp oil. Stir fry garlic till fragrant. 
  6. Increase heat. Add chicken and quickly stir fry chicken till a bit cooked (or brown)
  7. Reduce heat. Add sauce. Keep stirring and make sure you scrape the bits of chicken stuck to the pan.
  8. When chicken is cooked, add the broccoli. Turn off the heat and stir to mix the broccoli and chicken together.

Milo Jelly

 My Thoughts

This is a refreshing dessert and a favourite of my nephews.


Ingredients

  • Milo Jelly
    • 400 ml water
    • 4 heap tbsp Milo powder - more if you like
    • 5 1/2 tbsp sugar
    • 1/2 tsp jelly powder
    • 2 tsp agar-agar powder
  • Milk Jelly
    • 120 ml water
    • 80 ml evaporated milk
    • 3 tbsp sugar
    • 1/4 tsp jelly powder
    • 1 tsp agar-agar powder
    • few drops of vanilla essence
Method
  1. Wet the mould before using. This will make sure the jelly pop out from the mould easily.
  2. Milo Jelly
    1. Put all ingredients in a saucepan.
    2. Stir to dissolve sugar and agar-agar powder.
    3. Bring to a gentle boil. Stir frequently.
    4. Lower heat to simmer an additional 2-3 minutes.
    5. Pour into mould.
  3. When jelly slightly set, scratch the top with a fork. Make the milk jelly. 
  4. Milk Jelly
    1. Put all ingredients in a saucepan.
    2. Stir to dissolve sugar and agar-agar powder.
    3. Bring to a gentle boil. Stir frequently.
    4. Lower heat to simmer an additional 2-3 minutes.
  5. Gently pour onto the top of milo jelly.
  6. Let the jelly set a little.
  7. Leave the jelly in the fridge for at  least 2 hours before serving.

Steam Minced Pork with Pickled Lettuce

 My Thoughts

Mom gave me 2 cans of pickled lettuce. Coincidentally I had not gone to the market yet and only had minced pork in the freezer. 

So, I decided to make this dish. Very simple and not much preparation needed.

Since I already use the electric steamer to steam my rice, I added another tier for this.

Was planning to use any leftovers to cook with porridge the next day, but there weren't any leftovers. 😅


Ingredients
  • 250g minced pork
  • 1 can pickled lettuce
  • 1 tsp shao xing wine
  • 1 tsp sesame oil
  • 1 ½ tbsp cornflour
  • A little soy sauce
  • A little dark soy sauce

Method
  1. Remove the pickled lettuce from can. DO NOT throw the liquid.
  2. Roughly chop the lettuce. Set aside.
  3. In a bowl, mix the minced pork, wine and sesame oil.
  4. Add pickled lettuce. Drizzle some soy sauce. Mix
  5. Drizzle a bit of dark soy sauce. Mix
  6. Add about 2 tbsp of pickle juice. Stir.
  7. Transfer to a steaming plate.
  8. Flatten the surface.
  9. Steam for about 12 - 15 minutes. 
  10. Serve hot.

Steam pork with Shrimp Sauce





My Thoughts
I don't use a rice cooker anymore. I use an electric steamer to steam my rice. 😅

So, I cook this dish when I am feeling a little bit lazy. I steam my rice on bottom tier and this dish on the top tier. Less cleaning up 😂

I use this sauce to marinate.



Ingredients
  • 500g pork belly or shoulder (no skin) -  sliced
  • 6 chili padi -  sliced 
  • 2 stalks spring onion - separate white from green
  • Marinade (A)
    • 1 tbsp fine shrimp sauce (or just enough to coat pork slices)
    • 1 tsp sugar
    • 2 tbsp water
    • 1 tsp cornflour 
Method
  1. Marinade the sliced pork for about 15 minutes. Use enough shrimp sauce to coat the pork. Don't use too much.
  2. Place pork into steaming plate.
  3. Add chili padi. Mix a little.
  4. Lightly smash the white part of spring onion and place on top of pork.
  5. Steam high heat for about 10 minutes. 
  6. Remove the white part of spring onion. 
  7. Chop green part of spring onion and garnish.
  8. Serve hot.
